When I worked for the clinic, we had to buy both latex and nitrile gloves, for those who had allergy to latex.

I think food service gloves are poly.

Not a single country mandates that food workers wears gloves. You run more risks wearing gloves than you do hands because you are less likely to change them when you should and last I checked gloves don't kill bacteria like soap and sanitizer do.
