Sockeye filets frozen the day the day they were caught this summer. Salt the filets then dry to a nice surface pellicle. Brown sugar...a little soy sauce...8 hours of smoke...apple and maple... The Christmas stash...and no more shopping required. Which came early this year...and it's a brand new Bradley Digital Smoker! Santa promised less and delivered more...at 10% off for seniors this morning too! I was holding out for an older style analog Little Chief but the freaking things are ridiculously priced if you can even find one. But the stores only carry frozen Chinese sewer fish. (I'd kill for an oyster burger for dinner) Gotta stock up on pickled herring, it isn't Christmas without that. Quote

My dad sold bradley his first warehouse, those are made in canada or at least used to be. We've had one for ages, tho i've stil got the older non digital one. Amazing machines once you dial them in. Also i've just got my annual December salmon in the creek, they'll be here till about new years. Little buggers woke me up last night thrashing around as they do. herbie Posted December 9, 2025 Report Posted December 9, 2025 My kid would haul the boat behind the lawn tractor and fish all day, smoke trout and char constantly, Fed the barn cats and chickens the heads and guts. We'd bring care packages of it to relatives down south at Xmas. When I grew up down there we had Norwegian, German, Danish friends and we'd sll go with our Dads to the Orphans Fund herring sale for buckets of herring to pickle. A friend's family owed a major commercial brand that used their Gramma's recipe. Quote
